Prepare the Chicken
Cut the chicken breast into thin strips. Season with salt, black pepper, and 1 tablespoon of fajita seasoning.

Prepare the Vegetables
Slice the bell peppers and onion into thin strips. Toss with the remaining tablespoon of fajita seasoning.
Cooking

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, stirring occasionally, until cooked through. Remove from the skillet and set aside.

Cook the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned bell peppers and onions. Sauté for about 5 minutes or until tender.

Combine Chicken and Vegetables
Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and heat through for an additional 2 minutes.
Assembling and Cooking Quesadillas

Assemble Quesadillas
On one half of each tortilla, layer a portion of the chicken and vegetable mixture, then sprinkle with shredded cheese. Fold the other half of the tortilla over the filling.

Cook Quesadillas
Wipe the skillet clean and return it to medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden brown and the cheese has melted. Repeat with remaining quesadillas.

Slice and Serve
Cut each quesadilla into wedges and serve hot with your choice of salsa, sour cream, or guacamole.
