Preparing the Salsa

In a medium bowl, combine the diced tomatoes, finely chopped onion, chopped cilantro, lime juice, and salt. If using jalapeño, add it to the mixture. Stir everything together until well combined.

Taste and Adjust
Taste the salsa and adjust the seasoning if necessary. Set aside to let the flavors meld while you prepare the quesadillas.
Making the Quesadilla

Heating the Pan
Heat a non-stick skillet over medium heat. Add 1 tablespoon of olive oil or butter, allowing it to melt and coat the bottom of the pan.

Assembling the Quesadilla
Place one flour tortilla in the skillet. Evenly sprinkle 1 cup of shredded cheese over half of the tortilla. Fold the other half over the cheese to create a half-moon shape.

Cooking the Quesadilla
Cook the quesadilla for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side.

Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process for the remaining tortillas, adding more oil or butter as needed.

Cut the quesadillas into wedges and serve them hot with the prepared salsa.
