Preparation of Chicken Tinga

    Cook Chicken

    In a pot, add the chicken breasts and cover them with water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until fully cooked.

    Shred Chicken

    Once cooked, remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks.

    Sauté Vegetables

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-5 minutes.

    Combine Ingredients

    Add the shredded chicken, tomato sauce, chipotle peppers, salt, and black pepper to the skillet. Stir to combine and simmer for 10-15 minutes until heated through and flavors meld.

Assembling Nachos

    Prepare Baking Tray

    Preheat your oven to 180°C (350°F). On a large baking tray, spread the tortilla chips evenly.

    Add Chicken Tinga

    Evenly distribute the chicken tinga mixture over the tortilla chips.

    Add Cheese

    Sprinkle the shredded cheddar and Monterey Jack cheese generously over the top of the chicken tinga.

    Place the tray in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

    Add Toppings

    Once out of the oven, top the nachos with sour cream, guacamole, fresh cilantro, and jalapeño slices as desired.
