    In a bowl, combine masa harina, salt, and water. Mix until a dough forms.

    Knead the dough for about 5 minutes until smooth and pliable. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Cook Potatoes

    Boil the diced potatoes in salted water until tender but not mushy. Drain and let cool.

    In a mixing bowl, combine the cooked potatoes, black beans, queso fresco, onion, garlic, cilantro, cumin, salt, and black pepper. Mash slightly to combine well.

    Divide the dough into small balls. Flatten each ball into a disc, place a spoonful of filling in the center, and fold the dough over to create a half-moon shape. Press the edges to seal.
