Prepare the Sopes

    Mix the Dough

    In a large mixing bowl, combine the masa harina and salt. Gradually add the warm water, mixing until a soft dough forms. The dough should be pliable but not sticky.

    Shape the Sopes

    Divide the dough into 12 equal portions and roll each portion into a ball. Flatten each ball into a disk about 1/4 inch thick. Use your fingers to create a raised edge around the disk to form a small rim.

    Cook the Sopes

    Heat a skillet over medium-high heat and add the vegetable oil. Once hot, cook each disk for about 2-3 minutes on each side, or until lightly browned and cooked through. Remove from the skillet and set aside.

Assemble the Sopes

    Take each cooked sope and spread a generous tablespoon of refried beans on top.
