    Prepare the Ingredients

    Chop the onion, celery, carrots, jalapeño, and potato into small, uniform pieces. Dice the bacon into small strips.

Cooking

    Cook the Bacon

    In a large pot over medium heat, cook the diced bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté the Vegetables

    In the same pot, add the chopped onion, celery, carrots, jalapeño, and potato. Sauté for about 5-7 minutes until the vegetables begin to soften.

    Add Liquids

    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes or until the potatoes are tender.

    Add Seasonings

    Stir in the milk, salt, black pepper, cumin, and chili powder. Allow the chowder to simmer for an additional 5 minutes.

    Combine with Bacon

    Add the cooked bacon back into the pot and stir well. Adjust seasoning if necessary.

    Garnish and Serve

    Ladle the chowder into bowls. Garnish with fresh cilantro and serve with lime wedges on the side.
