    Rinse the Rice

    In a fine-mesh strainer, rinse 1 cup of long-grain white rice under cold running water until the water runs clear. This helps remove excess starch.

    Soak the Rice

    Combine the rinsed rice and 4 cups of water in a large bowl. Allow the rice to soak for at least 4 hours or overnight to soften.

    Blend Ingredients

    After soaking, transfer the rice and water to a blender. Add the 2 cinnamon sticks and blend on high until the rice is finely ground and the mixture appears milky.

    Strain the Mixture

    Pour the blended mixture through a fine-mesh strainer or cheesecloth into a large pitcher to separate the liquid from the rice solids. Press down on the solids to extract as much liquid as possible.

    Add Flavorings

    To the strained rice milk, add 1 cup of sweetened condensed milk, 1 cup of milk, 1 tsp of vanilla extract, 1 tbsp of sugar, and a pinch of salt. Stir well to combine.

    Chill and Serve

    Refrigerate the horchata for at least 2 hours before serving. Serve over ice and sprinkle with additional cinnamon if desired.
