Preheat the oven
Preheat your oven to 375°F (190°C).

Prepare the filling
In a mixing bowl, combine shredded chicken, refried beans, and 1 cup of the shredded cheese. Mix well to create a uniform filling.

Soften tortillas
In a skillet over medium heat, lightly warm the corn tortillas for about 10-15 seconds on each side until they are pliable.

Fill the tortillas
Place about ¼ cup of the filling in the center of each tortilla, then roll them up tightly and place seam-side down in a greased baking dish.

Add sauce
Once all tortillas are filled and placed in the baking dish, pour the enchilada sauce evenly over the top, then sprinkle with the remaining shredded cheese.

Bake the enchiladas
Cover the baking dish with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Garnish and serve
Remove the enchiladas from the oven and let them cool for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños as desired before serving.
