Dough Preparation

    Mix the Dry Ingredients

    In a large bowl, whisk together the all-purpose flour and salt.

    Cut in the Butter

    Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.

    Add Egg and Water

    Beat the egg and stir it into the flour mixture. Gradually add cold water, mixing until the dough comes together.

    Knead and Chill the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Chicken Tinga Filling Preparation

    Cook the Chicken

    In a pot, add the chicken breasts and cover with water. Bring to a boil and cook for about 15-20 minutes until fully cooked. Remove and shred the chicken.

    Sauté the Aromatics

    In a skillet, heat the olive oil over medium heat. Add diced onion and minced garlic, cooking until softened, about 5 minutes.

    Add the Spices and Tomatoes

    Stir in the chipotle peppers, diced tomatoes, chicken broth, cumin, salt, and pepper. Bring to a simmer.

    Combine Chicken with the Sauce

    Add the shredded chicken to the skillet and mix well. Let it simmer for 10 minutes until thickened. Remove from heat and let cool.

Assembling the Empanadas

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a round cutter (about 4-5 inches in diameter).

    Fill the Empanadas

    Place about 2 tablespoons of chicken tinga filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Crimp the edges with a fork.

    Brush with Egg Wash

    Brush the tops of the empanadas with the egg wash to give them a golden color when baked.

Baking the Empanadas

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Bake the Empanadas

    Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

    Cool and Serve

    Allow the empanadas to cool for a few minutes before serving. Enjoy them warm!
