    Prepare the churro dough

    In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

    Add the flour

    Once boiling, remove the saucepan from heat and stir in the all-purpose flour until the mixture forms a ball. Allow it to cool for about 5 minutes.

    Incorporate the eggs

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.

    Heat the oil

    In a large, deep skillet, heat vegetable oil to 350°F (175°C) over medium-high heat.

    Pipe the churros

    Transfer the churro dough to a piping bag fitted with a star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil.

    Fry the churros

    Fry the churros until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    Coat with cinnamon sugar

    While still warm, toss the churros in cinnamon sugar until well coated.

Chocolate Ganache

    Heat the cream

    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

    Remove from heat and add the semi-sweet chocolate chips. Let sit for 2-3 minutes to melt.

    Stir the mixture until smooth. Add vanilla extract and mix until fully incorporated.
