Chips

    Prepare the Chips

    Preheat your oven to 180°C (350°F). In a mixing bowl, combine the tortilla chips with olive oil and sea salt. Toss to ensure the chips are evenly coated.

    Spread the chips out in a single layer on a baking sheet. Bake in the preheated oven for 10-12 minutes or until golden and crispy. Remove and set aside.

Queso

    Make the Queso

    In a saucepan over medium heat, combine the shredded cheddar cheese, softened cream cheese, and milk. Stir constantly until melted and smooth.

    Add the diced jalapeño and garlic powder to the cheese mixture. Stir well and let simmer for about 5 minutes. Once done, remove from heat and set aside.

Mole

    Prepare the Mole

    In a small saucepan, combine the mole sauce and chicken stock. Stir well to combine and heat over medium-low heat.

    Allow the mole to simmer for about 5 minutes until heated through. Remove from heat and set aside.

Esquites

    Prepare the Esquites

    In a skillet over medium heat, add the corn kernels and cook for about 5-7 minutes until heated through.

    Remove from heat and stir in lime juice, crumbled Cotija cheese, chopped cilantro, and chili powder. Mix until well combined.
