    Prepare the Chips

    Place the tortilla chips in a serving bowl and set aside.

Queso Dip

    Make the Queso Dip

    In a saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, and milk. Stir until the cheeses melt and the mixture is smooth.

    Add Flavor

    Stir in the diced jalapeño, garlic powder, cumin, and salt. Continue to cook for an additional 2-3 minutes, stirring frequently. Remove from heat and transfer to a serving bowl.

Guacamole

    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash and Mix

    Mash the avocados with a fork until smooth. Add lime juice, diced red onion, chopped cilantro, and salt. Mix well to combine.

    Add Tomatoes

    Gently fold in the diced tomato. Transfer to a serving bowl.

Esquites

    Cook the Corn

    If using fresh corn, remove the kernels from the cobs. If using frozen corn, thaw it first. In a skillet over medium heat, cook the corn for about 5-7 minutes until tender.

    In a mixing bowl, combine cooked corn, mayonnaise, crumbled cotija cheese, lime juice, chili powder, and salt. Stir until everything is well mixed.
