Preparing the Meat

    Brown the Meat

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the chuck roast and short ribs with salt and black pepper. Brown the meat on all sides for about 5-7 minutes.

    Prepare the Broth

    Remove the meat from the pot and set aside. In the same pot, add the chopped onion and garlic cloves, sautéing until soft and fragrant.

    Soak the Chiles

    While the onion and garlic are cooking, remove the stems and seeds from the guajillo and ancho chiles. In a bowl, soak them in hot water for about 15 minutes until soft.

    Blend the Sauce

    Drain the chiles and add them to a blender with the sautéed onion and garlic, cumin, oregano, and a cup of the beef broth. Blend until smooth.

    Return the meat to the pot, pour the blended sauce over, add the remaining beef broth, bay leaves, and the cinnamon stick. Bring to a simmer.
