Marinate the Steak

    Prepare the Marinade

    In a small bowl, mix together the salt, black pepper, cumin, and garlic powder.

    Marinate the Steak

    Rub the spice mixture all over the flank steak. Place the steak in a resealable plastic bag or a dish, drizzle with olive oil, and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Cook the Steak

    Grill or Sear the Steak

    Preheat a grill or skillet over medium-high heat. Once hot, add the marinated flank steak and cook for about 4-5 minutes per side, or until the steak reaches your desired doneness (145°F for medium rare).

    Rest and Slice the Steak

    Remove the steak from the grill or skillet and let it rest for 5-10 minutes. Once rested, slice it thinly against the grain.

Assemble the Quesadillas

    Layer the Ingredients

    On one half of each flour tortilla, layer a generous amount of shredded cheese, followed by sliced flank steak, and a sprinkle of chopped cilantro. Fold the tortilla over to create a half-moon shape.

    Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
