Prepare Ingredients
Gather all ingredients and prepare them as follows: dice the carrot, bell pepper, and chicken (if using). Mince the garlic and slice the green onions.

Cook Rice
If you haven't already, cook the jasmine rice according to package instructions and let it cool. Cold rice works best for frying.
Cooking

Heat the Wok
Place a wok or large skillet over high heat and add 1 tablespoon of sesame oil. Allow it to heat until shimmering.

Add Protein (if using)
If you are using chicken, add the diced chicken breast to the wok and stir-fry for about 5-7 minutes until cooked through. Remove from the wok and set aside.

Stir-fry Vegetables
Add the remaining tablespoon of sesame oil to the wok. Add minced garlic, diced carrot, and diced bell pepper. Stir-fry for about 2-3 minutes until the vegetables begin to soften.

Add Rice
Add the cold cooked jasmine rice to the wok, breaking up any clumps. Stir-fry for about 5 minutes, allowing the rice to heat through and get slightly crispy.

Season the Rice
Pour in the soy sauce while stirring continuously to ensure the rice is evenly coated. Season with salt and black pepper to taste.

Finish with Green Onions
Add the sliced green onions and stir-fry for an additional minute before removing from heat.
