Preparing the Baby Squid

Clean the Squid
Rinse the baby squid under cold water. Remove the head, beak, and innards. Pat dry with paper towels.

Make the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and baking powder until well combined.
Frying the Baby Squid

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 180°C (350°F).

Coat the Squid
Dredge the cleaned baby squid in the flour mixture until evenly coated. Shake off any excess flour.

Fry the Squid
Carefully add the coated baby squid to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making the Lime Dip

Combine Ingredients
In a small bowl, mix together the fresh lime juice, salt, black pepper, chili flakes, and chopped coriander until well combined.
Serving

Serve the Dish
Place the fried baby squid on a serving platter and serve hot with the lime dip on the side.
