Prepare the Ingredients
Wash the morning glory thoroughly to remove any dirt or grit. Drain and cut into 4-5 inch lengths. Peel and finely chop the garlic cloves. If using, slice the fresh red chillies diagonally into thin rings.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté Garlic
Add the chopped garlic to the hot oil and sauté for about 30 seconds or until fragrant, being careful not to let it burn.

Add Chillies (Optional)
If using fresh red chillies, add them to the skillet and stir-fry for another 30 seconds to infuse the oil with their heat.

Season the Dish
Pour in the soy sauce and add salt, stirring well to coat the morning glory evenly. If the mixture seems dry, add the water to help create a little steam for cooking.

Finish Cooking
Continue to stir-fry for an additional minute, ensuring the morning glory is tender but still has a slight crunch. Remove from heat.
Serving

Transfer the stir-fried morning glory to a serving dish and enjoy hot as a side dish with rice or as a part of a larger meal.
