1. Prepare the Ingredients

Wash the Chinese leaf thoroughly under cold water. Cut it into bite-sized pieces. Peel and thinly slice the garlic and ginger. Peel the carrot and cut it into thin matchsticks. Chop the spring onions into small pieces, separating the white and green parts.

2. Heat the Wok

In a large wok or frying pan, heat a tablespoon of vegetable oil over medium-high heat until shimmering.

3. Sauté Garlic and Ginger

Add the sliced garlic and ginger to the hot oil. Sauté for about 30 seconds until fragrant, being careful not to burn them.

4. Add Carrots

Add the carrot matchsticks to the wok and stir-fry for 1-2 minutes until they begin to soften.

5. Stir in Chinese Leaf

Add the chopped Chinese leaf to the wok and stir-fry for another 3-4 minutes until it wilts down and is tender but still crisp.

6. Season the Dish

Pour in the soy sauce, sesame oil, salt, and black pepper. Stir well to combine all the ingredients and ensure the Chinese leaf is evenly coated with the seasoning.

7. Add Spring Onions

Finally, add the white parts of the spring onions to the wok and stir-fry for an additional minute. Reserve the green parts for garnish.

8. Serve

Remove the stir-fried Chinese leaf from the heat. Transfer to a serving plate and garnish with the green parts of the spring onions. Serve immediately while hot.
