Preparation

    Prepare the Ingredients

    Slice the chicken (or beef/tofu) into thin strips. Clean and slice the mushrooms, bell pepper, and julienne the carrot. Mince the garlic and slice the green onions.

    Cook the Noodles

    In a pot of boiling water, add the flat rice noodles and cook according to the package instructions until al dente. Drain and set aside.

    Stir-fry the Protein

    In a large wok or frying pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken (or beef/tofu) and stir-fry for about 5-7 minutes, or until cooked through. Remove and set aside.

    Stir-fry the Vegetables

    In the same wok, add a little more oil if necessary. Add minced garlic and sauté for 30 seconds until fragrant. Add the sliced bell pepper, julienned carrot, and mushrooms, and stir-fry for an additional 3-4 minutes until the vegetables are tender yet crisp.

    Combine Ingredients

    Return the cooked protein to the wok with the vegetables. Add the cooked noodles, soy sauce, oyster sauce, salt, and black pepper. Toss everything together and stir-fry for another 2-3 minutes until well combined and heated through.

    Garnish and Serve

    Remove from heat, garnish with sliced green onions, and serve hot.
