Prepare the Vermicelli Noodles
Boil water in a pot, add the rice vermicelli noodles, and let them cook for about 3-4 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Prawns
If using whole prawns, peel and devein them. You can pre-cook them by boiling or steaming until they turn pink and firm. Set aside.
Assembling the Summer Rolls

Soften the Rice Paper Wrappers
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it softens. Remove and place it on a clean, flat surface.

Fill the Wrapper
On the lower third of the softened rice paper wrapper, place a lettuce leaf, a small amount of rice vermicelli noodles, a few pieces of prawn, some cucumber strips, carrot strips, mint leaves, and cilantro leaves.

Roll the Wrapper
Fold the sides of the rice paper over the filling and roll it tightly from the bottom up to form the summer roll. Repeat the process with the remaining wrappers and filling.

Combine the Ingredients
In a small bowl, mix together the peanut butter, soy sauce, rice vinegar, honey, and water until smooth. Adjust the consistency by adding more water if necessary.

Sprinkle crushed peanuts on top of the dipping sauce for added crunch.

Arrange the completed summer rolls on a serving platter alongside the dipping sauce.
