Prepare the filling
In a large bowl, combine shredded carrots, shredded cabbage, bean sprouts, green onions, and cilantro. Mix well.

Season the filling
Add soy sauce, sesame oil, salt, and black pepper to the vegetable mixture. Stir until all ingredients are evenly coated.
Assembling the rolls

Prepare the wrappers
Take one spring roll wrapper and place it on a clean, flat surface with one corner facing you.

Fill the wrapper
Place about 2 tablespoons of the vegetable filling near the corner of the wrapper closest to you.

Roll and seal
Fold the corner over the filling, then fold in the sides. Roll tightly away from you to enclose the filling. Seal the edge with a little water if necessary.
Frying

Heat the oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the spring rolls
Carefully place the spring rolls in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes.

Drain and serve
Remove the spring rolls from the oil and drain on paper towels. Serve hot with your choice of dipping sauce.
