    Prepare the Ingredients

    Chop the onion, fresh red chilies, garlic, ginger, betel leaves, bell pepper, and carrot. Trim and cut the green beans. Cut the chicken thighs into bite-sized pieces.

Cooking

    Sauté the Base

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Aromatics

    Stir in the minced garlic, ginger, and chopped fresh red chilies. Cook for another 2-3 minutes until fragrant.

    Mix in Spices

    Add turmeric powder and curry powder, and cook for 1 minute, stirring constantly to prevent burning.

    Add Liquids

    Pour in the coconut milk and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer.

    Cook the Chicken

    Add the chicken pieces to the pot. Cover and cook for about 15 minutes, or until the chicken is cooked through.

    Stir in the sliced bell pepper, carrot, and green beans. Cook for another 5-7 minutes until the vegetables are tender.

    Add the chopped betel leaves and stir to combine. Cook for an additional 2 minutes.
