Preparing the Filling

Cook the Pork
In a pan over medium heat, cook the minced pork until browned and fully cooked, about 5-7 minutes. Drain excess fat.

Sauté Aromatics
Add minced garlic and chopped shallots to the pork, cooking for another 2-3 minutes until fragrant.

Add Other Ingredients
In the same pan, add the king prawns, crab meat, shredded carrot, bean sprouts, and cooked rice vermicelli. Mix well.

Season the Filling
Season the mixture with salt and black pepper. Cook for an additional 2-3 minutes until the prawns turn pink. Remove from heat and let it cool.
Rolling the Spring Rolls

Prepare the Wrappers
Lay a spring roll wrapper on a clean surface, with one corner pointing towards you.

Fill the Wrapper
Place a spoonful of the filling near the corner closest to you. Fold the corner over the filling, then fold in the sides, and roll tightly away from you.

Seal the Rolls
Seal the edge of the wrapper with a little water to keep it closed. Repeat with remaining wrappers and filling.
Frying the Spring Rolls

Heat the Oil
In a deep frying pan or wok, heat enough oil for deep frying over medium-high heat.

Fry the Rolls
Once the oil is hot, carefully add the spring rolls in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Mix the Ingredients
In a small bowl, combine fish sauce, water, sugar, lime juice, minced garlic, and chopped chili. Stir until the sugar dissolves.
