Broth Preparation

    Prepare the Beef Bones

    Place the beef bones in a large pot and cover with water. Bring to a boil and let it boil for about 5 minutes.

    Rinse the Bones

    After boiling, remove the bones and rinse them under cold water to remove impurities.

    Make the Broth

    In a large pot, add the rinsed bones and 4 liters of fresh water. Peel the onion and ginger, and char them by placing them directly on a flame or in a hot pan until slightly blackened. Add them to the pot.

    Add Spices

    Add star anise, cinnamon stick, cloves, fish sauce, and salt to the pot. Bring the mixture to a boil.

    Simmer the Broth

    Reduce the heat to low and let it simmer for at least 4 hours, skimming off any foam or fat that rises to the top.

Noodles and Assembly

    Cook the Rice Noodles

    In a separate pot, cook the rice noodles according to package instructions, usually about 5-7 minutes. Drain and set aside.

    Prepare the Meat

    Thinly slice the beef sirloin or chicken breast. If using chicken, you may choose to poach it in the broth for added flavor.

    Assemble the Pho

    In a bowl, place a portion of cooked noodles, top with raw or cooked beef/chicken slices, and ladle the hot broth over the top.

    Garnish

    Top with fresh basil, cilantro, bean sprouts, sliced jalapeños, and chopped green onions. Squeeze lime juice over the soup to taste.
