Classic Morning Glory

Classic Morning Glory

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a muffin tin or line it with paper liners.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the vegetable oil and vanilla extract. Mix until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    Add Remaining Ingredients

    Fold in the grated carrots, shredded coconut, chopped walnuts, and raisins until evenly distributed.

    Fill Muffin Tin

    Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

    Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
