Method

Waffle Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk until well mixed.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the coconut milk, pandan juice, vegetable oil, and egg until smooth.

  3. 3

    Combine Wet and Dry

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Preheat Waffle Iron

Preheat your waffle iron according to the manufacturer's instructions.

  5. 5

    Cook Waffles

Once the waffle iron is ready, ladle the batter onto the iron, using about 1/2 cup for each waffle. Close the lid and cook until the waffles are golden brown and crispy, about 3-5 minutes.

Serving Suggestions

  1. 6

    Serve the Waffles

Carefully remove the waffles from the iron and place them on a serving plate.

  2. 7

    Add Toppings

Top each waffle with a scoop of ice cream or sorbet. Optionally, sprinkle shredded coconut and add fresh fruit on top.

  3. 8

    Enjoy

Serve immediately while the waffles are warm and enjoy your delicious freshly cooked pandan waffles!
