Prepare the filling

    Cook the pork

    In a large skillet over medium heat, add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add vegetables

    Stir in the chopped green onions, shredded carrot, minced garlic, and grated ginger. Cook for another 3-4 minutes until the vegetables are tender.

    Season the filling

    Add soy sauce, sesame oil, salt, and black pepper to the skillet. Mix well and cook for an additional 2 minutes. Remove from heat and let it cool.

Assemble the spring rolls

    Prepare wrappers

    Lay one spring roll wrapper on a clean surface with a corner pointing towards you.

    Fill the wrapper

    Place about 2 tablespoons of the pork filling near the corner closest to you. Fold the corner over the filling and roll tightly. Fold in the sides and continue rolling until sealed. Use a little water to seal the edge.

    Repeat the process with the remaining wrappers and filling.

Fry the spring rolls

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add the spring rolls to the hot oil in batches, frying for about 3-4 minutes or until golden brown and crispy. Turn occasionally for even cooking.
