Broth Preparation

Prepare the Chicken
Place the whole chicken in a large pot.

Add Water
Pour 12 cups of water into the pot with the chicken.

Season the Broth
Add fish sauce, salt, and sugar to the pot.

Simmer the Broth
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the chicken is cooked through.

Remove the Chicken
Carefully remove the chicken from the pot and set it aside to cool. Strain the broth to remove all solids.

Shred the Chicken
Once the chicken is cool enough to handle, shred the meat into bite-sized pieces.
Noodle and Topping Preparation

Cook the Rice Noodles
In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

Prepare Fresh Toppings
Rinse the fresh basil and bean sprouts. Slice the lime into wedges and chop the green onions. Slice the chili peppers if you desire heat.
Assembly and Serving

Assemble the Pho
In serving bowls, place a portion of the cooked rice noodles at the bottom.

Ladle hot broth over the noodles and top with shredded chicken.

Add fresh basil, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions as desired.
