Preparing the Chicken Nuggets

Prepare Chicken
Cut the chicken breast into bite-sized pieces.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well.

Coat Chicken
Dip each piece of chicken into the batter, making sure it is fully coated.

Fry Nuggets
In a deep pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the battered chicken pieces in batches and fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.

Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is tender.

In a small bowl, mix together the fish sauce, sugar, lime juice, and chili flakes until the sugar is dissolved.
