    In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk them together until well combined.

    In a separate bowl, whisk together the milk, vanilla extract, and the egg. Gradually add this mixture to the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be slightly lumpy.

    Peel the ripe bananas and mash them in a bowl until smooth. Stir in the cinnamon until evenly distributed.

    In a deep skillet or frying pan, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small spoonful of batter into it; it should sizzle and rise to the surface.
