Preparation
1. Prepare the Noodles
Cook the rice vermicelli noodles according to package instructions. Drain and set aside.
2. Cook the Pork and Shrimp
Boil the lean pork in salted water for about 15 minutes or until cooked. Let it cool, then slice thinly. Boil the shrimp until pink and opaque, about 2-3 minutes, then drain and let cool.
3. Assemble the Spring Rolls
Fill a wide, shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds, or until soft and pliable. Lay it flat on a clean surface. Place a lettuce leaf, a small handful of vermicelli noodles, mint leaves, slices of pork, and shrimp on the lower third of the wrapper. Fold the sides over the filling and then roll from the bottom up tightly. Repeat with remaining wrappers and filling.
