Preparation

Prepare the Tofu

1. Press the Tofu

Start by pressing the firm tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top. Let it sit for about 15-30 minutes.

2. Marinate the Tofu

While the tofu is being pressed, prepare the marinade. In a small bowl, combine the soy sauce, 1 tablespoon of vegetable oil, and the white part of the lemongrass (finely chopped). Once the tofu is pressed, cut it into cubes and add it to the marinade. Let it marinate for at least 15 minutes.

Prepare the Noodles and Vegetables

3. Cook the Rice Noodles

Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually around 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

4. Prepare the Vegetables

While the noodles are cooking, slice the cucumber into thin strips and set aside. Rinse the bean sprouts and pat dry. Chop the fresh mint leaves and set them aside.

Cook the Tofu

5. Fry the Tofu

In a non-stick skillet, heat the remaining tablespoon of vegetable oil over medium heat. Once hot, add the marinated tofu cubes. Cook until golden brown and crispy on all sides, about 10-15 minutes.

Assemble the Bowl

6. Combine Ingredients

In a large bowl, place a generous serving of the cooked rice noodles. Top with the crispy lemongrass tofu, sliced cucumber, bean sprouts, and chopped mint leaves.

7. Garnish and Serve

Sprinkle chopped peanuts over the bowl and add a squeeze of fresh lime juice. For an added kick, sprinkle chili flakes on top to taste. Serve immediately and enjoy your Bún Đậu Hũ!
