Preparation and Cooking
Marinate the Chicken
In a large bowl, combine minced garlic, chopped lemongrass, soy sauce, fish sauce, honey, vegetable oil, and lime juice. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
Cook the Noodles
Prepare rice vermicelli noodles according to package instructions. Once cooked, drain and rinse under cold water to prevent sticking. Set aside.
Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before slicing.
Assemble the Dish
