Prepare the Vermicelli Noodles
Cook the vermicelli noodles according to the package instructions. Once cooked, drain and rinse under cold water. Set aside.

Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into thin strips. You can pan-fry the tofu in a little oil until golden if desired.

Prepare the Vegetables
Julienne the carrot and cucumber. Wash the romaine lettuce leaves and pat them dry. Chop the fresh cilantro.

Assemble the Fresh Rolls
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it softens. Lay it flat on a clean surface. Place a few pieces of tofu, a small handful of vermicelli noodles, a romaine leaf, some carrot, cucumber, and cilantro on the lower third of the wrapper. Fold the sides over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.

Serve
Serve the fresh rolls with sweet chili dipping sauce on the side.
