Marinate the Chicken
In a large bowl, combine soy sauce, fish sauce, minced garlic, brown sugar, Thai chili paste, lime juice, and black pepper. Mix well. Add the chicken wings and ensure they are fully coated in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Fry the Wings
Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the marinated chicken wings in batches, making sure not to overcrowd the pot. Fry for 8-10 minutes or until golden brown and cooked through. Use a thermometer to ensure the internal temperature reaches 165°F (74°C).

Serve
Remove the wings from the oil and drain on paper towels. Serve hot with your favorite dipping sauce and enjoy!
