    Prepare the Ingredients

    Slice the chicken, beef, or pork into thin strips. Slice the red bell pepper and gather the basil leaves.

    Cook the Meat

    Heat vegetable oil in a large pan over medium heat. Add the sliced meat and cook until browned and cooked through, about 5-7 minutes. Remove the meat from the pan and set aside.

    Make the Curry Sauce

    In the same pan, add the Panang curry paste and fry for about 2 minutes until fragrant. Then add the coconut milk, fish sauce, and brown sugar. Stir well.

    Combine and Simmer

    Return the cooked meat to the pan and add the sliced red bell pepper and lime leaves (if using). Simmer for 5-10 minutes until the sauce thickens slightly.

    Finish with Basil

    Remove from heat and stir in the basil leaves. Adjust seasoning with more fish sauce or sugar if needed.

    Serve hot with steamed rice.
