Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Cook the Protein
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced beef, chicken, or pork and stir-fry until cooked through, approximately 5-7 minutes. Remove from the pan and set aside.

Scramble the Eggs
In the same pan, add another tablespoon of oil. Crack the eggs into the pan and scramble until fully cooked. Push to the side of the pan.

Combine Everything
Add the soaked noodles, cooked protein, bean sprouts, and green onions to the pan. Stir-fry everything together for 3-5 minutes until heated through. Adjust seasoning with soy sauce if desired.

Serve
Plate the Pad Thai and sprinkle with crushed peanuts. Serve hot.
