Prepare the Dough
In a bowl, mix warm water, sugar, and yeast. Let sit for 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and knead until smooth, about 10 minutes. Let the dough rise in a warm place for 1 hour or until doubled in size.

Make the Filling
In a skillet over medium heat, cook the ground pork and sausage until browned. Add chopped mushrooms and cook for another 5 minutes. Stir in soy sauce, sesame oil, green onions, and pepper. Scramble in the egg until fully cooked. Remove from heat and let cool.

Assemble the Buns
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a circle about 4 inches in diameter. Place a generous tablespoon of filling in the center of each circle, then fold the edges over the filling and pinch to seal.

Steam the Buns
Place the buns in a steamer basket lined with parchment paper, ensuring they are not touching. Steam over simmering water for about 15-20 minutes until puffed and cooked through. Serve hot.
