Method
Pork Chop
Prepare the Rub
In a small bowl, combine minced garlic, smoked paprika, olive oil, salt, and black pepper to form a paste.
Rub the Chops
Generously rub the mixture onto both sides of the pork chops. Let them marinate for at least 30 minutes.
Boudin Rice
Cook the Rice
In a medium saucepan, bring the chicken broth to a boil. Add the basmati rice, cover, and reduce heat to low. Cook for 15-20 minutes until rice is tender and liquid is absorbed.
Prepare the Boudin
While the rice cooks, remove the casing from the boudin sausage and crumble it into a skillet. Cook over medium heat until browned, about 5 minutes.
Combine Ingredients
Once the rice is done, fluff it with a fork and stir in the cooked boudin and chopped green onions.
Sautéed Shrimp
Sauté the Shrimp
In a large skillet, melt the butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
Cook the Shrimp
Add the shrimp to the skillet, season with salt and pepper, and sauté until shrimp are pink and opaque, about 3-5 minutes.
Trinity Sauce
Finish the Sauce
Add tomato sauce and hot sauce to the sautéed vegetables, stir well, and let simmer for 5 minutes.
Garnish
Garnish the Dish
Sprinkle sliced scallions over the finished dish for a fresh touch before serving.
