Chowder Preparation

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Add Potatoes and Stock

    Stir in the diced potatoes and add the fish stock or clam juice. Bring the mixture to a boil, then reduce the heat and let simmer until the potatoes are tender, about 15 minutes.

    Creamy Base

    Add the heavy cream, bay leaves, thyme, salt, and black pepper. Stir well and let it simmer for another 5 minutes.

    Add Seafood

    Carefully add the scallops, shrimp, and cubed white fish to the chowder. Cook for an additional 5-7 minutes, until the seafood is cooked through and tender.

    Serve

    Remove the bay leaves and serve the chowder hot, garnished with fresh parsley if desired.
