Add Garlic and Broth
Stir in the garlic and cook for 1 minute until fragrant. Pour in the vegetable broth and add diced tomatoes, thyme, and bay leaf. Bring to a boil.

Simmer the Soup
Reduce heat to low and let the soup simmer for 20-25 minutes. Season with salt and black pepper to taste. Remove the bay leaf before serving.

Mix Salad Ingredients
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

Dress the Salad
In a small bowl, whisk together olive oil, vinegar, salt, and pepper. Drizzle over the salad and toss gently to combine.
Bun Directions

Prepare the Dough
In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Knead until smooth.

Let Dough Rise
Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape and Bake Buns
Preheat the oven to 375°F (190°C). Shape the dough into buns and place on a baking sheet. Bake for 15-20 minutes until golden brown.
