Beer Battered Fish & Frites Recipe

Method

Preparation of Frites

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Rinse under cold water and pat dry.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-6 minutes. Drain on paper towels and season with salt.

Preparation of Coleslaw

    Prepare the Vegetables

    Shred the purple cabbage and carrot. In a large bowl, combine the cabbage and carrot.

    Mix the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour over the cabbage and carrot, and toss to coat.

    Chill

    Refrigerate the coleslaw for at least 30 minutes before serving.

Preparation of Beer Battered Fish

    Make the Batter

    In a bowl, mix together flour, baking powder, salt, and black pepper. Gradually whisk in the Steam Whistle beer until smooth.

    Fry the Fish

    Heat oil in a deep fryer or large pan to 350°F (175°C). Dip each cod fillet into the batter, allowing excess to drip off. Carefully place into the hot oil and fry for 4-5 minutes or until golden brown. Remove and drain on paper towels.

Preparation of Remoulade

    Mix the Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, capers, parsley, lemon juice, garlic, salt, and black pepper. Mix well.
