Prepare the Salmon
Preheat the grill or a skillet over medium-high heat. Season the Atlantic salmon fillets with salt and pepper. Grill or pan-sear the salmon for about 4-5 minutes on each side, or until cooked through. Remove from heat and let it rest.

Assemble the Wrap
Lay the sundried tomato tortilla flat on a clean surface. Spread a tablespoon of citrus aioli on the tortilla. Place the cooked salmon fillet on top, followed by a tablespoon of pineapple chutney and a generous sprinkle of shredded Gruyere cheese.

Wrap it Up
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Ensure the filling is enclosed.

Optional Sides
If desired, prepare fries or a mixed salad as a side. For fries, you can fry or bake them according to package instructions. For salad, toss mixed greens with your choice of dressing.
