Frying the Frites

    Prepare the Potatoes

    Wash and peel the russet potatoes, then cut them into thin strips to make frites.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches, frying until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Making the Lobster Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt the shellfish butter and add the minced garlic. Sauté until fragrant, about 1 minute.

    Combine Ingredients

    Stir in the mascarpone cheese and heavy cream, mixing until smooth. Add the lemon juice and black pepper, and cook for an additional 2-3 minutes until warmed through.

Assembling the Dish

    Combine Lobster and Sauce

    Fold the chopped lobster meat into the mascarpone sauce.

    Serve

    On a plate, create a bed of frites and generously spoon the lobster and mascarpone sauce over the top.
