Method

Prepare Tarragon Anchovy Butter

    Make the Butter

    In a bowl, mix together the softened butter, chopped tarragon, minced anchovy fillets, and lemon juice until well combined. Set aside.

Prepare Green Onion Potato Croquettes

    Cook and Mash Potatoes

    Boil the cubed potatoes in salted water until fork-tender. Drain and mash them in a bowl.

    Combine Ingredients

    Add chopped green onions, beaten egg, flour, salt, and black pepper to the mashed potatoes. Mix until a smooth dough forms.

    Shape and Fry

    Form the mixture into small patties. Heat oil in a frying pan over medium heat and fry the patties until golden brown on both sides. Drain on paper towels.

Cook Halibut and Asparagus

    Season Halibut

    Season halibut fillets with salt and black pepper.

    Pan-Sear Halibut

    In a large skillet, heat olive oil over medium-high heat. Add halibut fillets and cook for about 4-5 minutes on each side, until cooked through and golden brown. Remove from heat.

    Grill Asparagus

    Toss asparagus with olive oil, salt, and black pepper. Grill over medium heat for 5-7 minutes until tender and slightly charred.

Serve

    Plate the Dish

    On each plate, place a halibut fillet, a few grilled asparagus spears, and a couple of potato croquettes. Top the halibut with tarragon anchovy butter and serve immediately.
