Prepare Marinade
In a medium bowl, whisk together olive oil, soy sauce, garlic, rosemary, brown sugar, salt, and black pepper until well combined.
Place the pork chops in a large resealable plastic bag or shallow dish and pour the marinade over the pork chops, ensuring each is fully coated.
Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to let the pork absorb the flavors.
Cooking the Pork Chop
Remove pork chops from the refrigerator and let them come to room temperature, about 30 minutes before cooking.
Preheat oven to 400°F (200°C).
Sear the pork chops for 2-3 minutes on each side, until a golden brown crust forms.
Transfer the skillet to the preheated oven and roast for 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
Remove the pork chops from the oven and let them rest for 5-10 minutes before serving to allow the juices to redistribute.
