    Trim the Tenderloin

    If not pre-trimmed, remove any silverskin and excess fat from the beef tenderloin using a sharp knife. Ensure the meat is clean and well-shaped.

    Season the Tenderloin

    Rub the entire surface of the tenderloin with olive oil, then generously season with kosher salt and black pepper. Make sure to cover all sides.

    Prepare Herb Mixture

    Chop the fresh rosemary and thyme. Mince the garlic cloves. Mix these together in a small bowl and then rub the mixture all over the seasoned tenderloin.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Sear the Tenderloin

    In a large oven-safe skillet, heat a bit of olive oil over medium-high heat. Once hot, sear the tenderloin on all sides until browned (about 2-3 minutes per side).

    Roast the Tenderloin

    Transfer the skillet to the preheated oven. Roast the tenderloin for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Remove the tenderloin from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute for a more tender bite.
