Smoking the Turkey

    Prepare the Turkey

    Rinse the turkey under cold water and pat it dry with paper towels. Remove the giblets and neck from the cavity.

    Marinate the Turkey

    In a large bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub the mixture all over the turkey, including under the skin and inside the cavity. Let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Soak pecan wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Turkey

    Place the soaked wood chips in the smoker box or directly on the coals. Place the turkey breast side up on the smoker rack. Pour chicken broth into the cavity of the turkey for moisture. Smoke the turkey for approximately 30-40 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.

    Rest and Serve

    Once done, remove the turkey from the smoker and let it rest for at least 30 minutes before carving. Serve and enjoy your pecan-smoked turkey!
