Prepare the Shirataki Noodles
Drain and rinse the Shirataki noodles under cold water for 2-3 minutes. Boil them in a pot of water for 2-3 minutes to remove the odor and then drain well.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.

Combine Ingredients
Add the drained Shirataki noodles and fresh spinach to the skillet. Toss everything together and cook for an additional 2-3 minutes until the spinach is wilted.

Season and Serve
Season with salt and black pepper to taste. Sprinkle with grated Parmesan cheese before serving.
