    Preparation

    Preheat your oven to 325°F (165°C). Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes.

    Seasoning

    Pat the turkey dry with paper towels. Rub the olive oil all over the turkey, ensuring it is evenly coated. Generously season the turkey inside and out with salt and black pepper.

    Herb Mixture

    In a small bowl, combine minced garlic, chopped rosemary, thyme, and sage. Rub this herb mixture under the skin of the turkey and inside the cavity.

    Stuffing

    Stuff the cavity of the turkey with the lemon and onion, cut in halves.

    Roasting

    Place the turkey breast-side up on a roasting rack in a roasting pan. Roast the turkey in the preheated oven for about 13-15 minutes per pound. Baste the turkey every 30 minutes with the pan juices.

    Checking Doneness

    The turkey is done when the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. This will take approximately 2.5 to 3 hours for a 12-14 lb turkey.

    Resting

    Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving. This allows the juices to redistribute, ensuring a moist turkey.
